Like his beloved Prine, whom Knight duets with on Prine’s chestnut “Mexican Home,” the cut that closes Almost Daylight, Knight fits comfortably in Texas honky-tonks, downtown Nashville venues, and cool Manhattan rock clubs. All in all, it really was an exceptional night of music for the Cincy/NKY scene. Not my usual thing, sure, but it was a terrific reminder that the Cincy/NKY scene is awesomely diverse and has a much deeper, varied, and ultimately interesting bench of bands making really great music.

Ten short months after the closing of the old building, the Southgate House Revival opened with the 2012 Cincypunk Fest. The renovated building’s primary performance space is the high-ceilinged Sanctuary, which has a similar capacity to the old House’s Ballroom (600). Let the house dry for at least 30 minutes before decorating. Pipe a thick layer of icing on the second wall piece and put it in between the front and back of the house, opposite of the other wall. Use cans to help support the structure as needed and let this much of the assembled house sit for 15 minutes to allow the icing time to harder. Here, I used royal icing that was piped on top of each other to create 3D structures like these windowsill “baskets” and filled them with sprinkles. I piped 3D flower beds for the front of the house, and filled them with sprinkles too (can you tell that I love sprinkles?). Snip off the end of the piping bag (about ½ cm opening) with royal icing.

Hold it high over the house and gently shake allowing the sugar to fall onto the roof of the gingerbread house. Piping bags and tips are crucial to creating a beautifully designed gingerbread house. Change out the tips to create fluffy stars down the side of the house or a small round tip to add dots and detailed designs.

It needs to be able to hold up to humidity and sitting out for a few weeks, so it bakes really hard and strong. That said, my kids kept nibbling on spare pieces of the gingerbread whenever I wasn’t looking. To put your house together get a flat surface like a cake board, cutting board, or cookie sheet. The shingles were laid using a ruler and a paring knife, to ensure a consistent size. This gingerbread-reproduction was crafted by a seasoned pro, whose creations take about 50 to 60 hours to complete.

Do not use warm air as this will melt the royal icing. I use a guide that is about 5 – 6 mm thick for most of the dough. For smaller parts of the house (chimney, doors, window shutters), I use dough guide that is thinner, about 3 mm. The rolled out dough should fit inside a half sheet baking sheet. Remove about 100 g of the flour and set aside.
